Catering a special event is what caterers are all about. The more creative room the caterer has to design a cake for a wedding or prepare different foods, the better the job. Ask around and find what caterers other people used and whether the caterer did a good job. If you have any schools that offer culinary arts, you could even ask around there and see what caterers they refer you to.
Ask your caterer for suggestions. They know what they are capable of doing and they have experience in their field. They can make recommendations to you which can be extremely helpful. It is always nice to get ideas other than your own. Find out how detailed something can be, or if there are limitations to designing with certain types of foods.
Also it would be a good idea to sample the caterer's food first. You should have everything agreed on before the party or special event. Work out payment, where they will set up, what food will be offered long before the event. If you find that your caterer is difficult to get along with, shop around some more. You don't want to deal with a caterer who is hard to work with at your party.
